The oven overshoots badly, or will not heat at all, and the dial setting makes no difference. On the mechanical Amana ranges the oven is controlled by a capillary thermostat — a sealed tube running from the knob to a sensing bulb clipped inside the cavity, filled with fluid that expands as it warms. When that tube is kinked or the charge escapes, the thermostat loses all reference and the oven either sits cold or runs away. It is nothing like a failed electronic sensor and it is diagnosed completely differently.

The sensing bulb has come loose from its clip inside the oven. Worth checking before anyone quotes a part. If the bulb is dangling instead of held in the airflow it reads the wrong temperature, and the oven behaves erratically with nothing actually broken. Re-seating it costs nothing.

A surface element will not heat, or only works flat out. Element or the infinite switch behind the knob. An element with only two states — off and maximum — is the switch, because that switch is what cycles power to produce anything in between.

The whole range is dead but the house has power. On a machine with no control board this is wiring, a terminal block, or one leg of the 240-volt supply. Electric ranges run on two legs, and losing one commonly leaves the cooktop working and the oven dead, or the reverse — which owners read as two simultaneous failures.

The gas oven lights, burns, then goes out. The oven igniter weakening. It also holds the gas valve open, so as it ages it glows brightly without drawing enough current to keep the valve up.

The timer dial turns but nothing happens when it reaches the set time. The mechanical timer’s switch contacts rather than its clockwork. On these the timing and the switching are separate mechanisms inside one part, and either can fail while the other keeps working.
